- Vinification
- The grapes are de-stemmed and gently pressed, then the must macerates 15-20 days on the skins at a controlled temperature of 28-30°C. Following the fermentation, the wine matures for 12-18 months in 5-10hl tonneaux, then an additional 6-8 months in the bottle.
- Sensory profile
- TA deep ruby red with garnet highlights, it is marked by rich aromas of wild berryfruit and subtle notes of vanilla. Smooth and warm in the mouth, it features superb structure, delicate balance, and long-lingering aromas and flavours. It is an ideal partner to full-flavoured fare, including game, red meat, and aged cheeses.
